  • Chesapeake stuffed Perch

    With fatherly duties in high demand this summer and a new job, I have not had much time to get out and target striper. However, I've managed to get in a few early morning crabbing trips with some Perching mixed in.

    In the past I've made Chesapeake stuffed rockfish a few times a season and even stuffed Tautog once. It has never disappointed!

    A few weeks ago, I pulled in a few really nice fat 12" Perch and set the nice fillets aside in the freezer for a special preparation. Last week, I had a nice crabbing trip with enough crabs left for 8oz extra meat. Last night, the magic happened and the two delicious catches from our bay came together! I you like to eat crab and fish, do yourself a favor and make this dish. You really can't go wrong with any flaky white fish. This was my first time making it with Perch. I sort of follow this recipe with a few of my own tweaks:

          Very nice! I'll need to try that some time.

          BTW: IMHO, wise choice, on focusing on your kids and job. I've done that for multiple years, and it has paid off well.

            Used to make that ......... Was my favorite........ We called it fish roll ups and pinned them with toothpicks ....... Um um good

                just some additional seasonings and I don't really measure anything. Panko bread crumbs are a good substitute for the stale bread
